Blistered Shishito Peppers


This wonderfully simple and flavorful side dish pairs well with chicken, steak or just about any other main protein. Ingredients: 2 tablespoons olive oil A pinch or two sea salt A pinch of pepper (optional) Directions: Heat the olive oil on medium/high heat and throw in prepared peppers (tops cut off and seeds removed). Stir around and allow the peppers to become blistered. Take off heat and sprinkle with salt and pepper.




Kale Chips


This is a simple, addicting and mostly healthy snack. The flavor of the kale really pops after it’s baked. Ingredients: Three cups roughly chopped kale 2 tablespoons olive oil Sea Salt (to taste) Directions: Toss the kale in olive oil, making sure it is well coated and lay on a baking tray. Sprinkle the salt and bake at 350 degrees for roughly 15 minutes (or until kale starts to turn slightly brown).




Tomato Mozzarella Bagel


This one is a favorite at farmer Casey’s house, a summertime addiction. This recipe highlights and celebrates the unbeatable flavor of a juicy backyard heirloom tomato. Ingredients: 1 everything bagel Several thick slices of tomato Garlic Salt (to taste) Mozzarella or Muenster Cheese (in slices) Directions: Toast the bagel and then melt cheese on the bagel, add tomato slices and sprinkle garlic salt to taste.




Pesto


Did you know you can use many types of herbs and/or greens to make a pesto? Here’s the basic recipe but experiment and have fun!
Ingredients: 2-3 cups herbs such as basil, parley or greens such as spinach, arugula ½ c olive oil ½ c parmesan or other finely grated hard cheese ¼ c walnuts or pine nuts salt/pepper to taste




Crustless Quiche


This is a great brunch or simple lunch or dinner meal that tastes great and has a nice wow factor for company too. Ingredients: 2 T butter plus more for greasing the pan ½ c chopped shallots, green onions or regular onions plus 1 to 1 ½ c of seasonal veggies – golden zucchini and chopped chard make a great combo (about 2 c of veggies in all) 6 large eggs 1-3/4 c of heavy cream 1 ½ c shredded cheese gruyere or cheddar or asiago work well – about 5 oz pinch of nutmeg, cayenne or other spices 1 t salt Directions: Preheat 325 F, butter a 9 inch deep dishlightly cook veggies in butter, spread over bottom of pan, sprinkle cheese on top – whisk rest of ingredients and pour egg mixture over the cheese bake 50-60 minutes until top is golden brown, cool for 10 min, slice and serve stays warms for 1-2 hours so making ahead while you do remaining side dishes works well
